This is another ‘posh’ salad like my Walnut Crusted Goats Cheese Salad. If you think I eat salads like this every day, I sadly don’t BUT how nice to be able to enjoy a restaurant style lunch every now and then and not feel guilty about it, especially when you have guests over.

I’ve never been a big fan of prosciutto straight from the packet, I like it crisp (in a BLT or on my Breakfast Eggs) but I actually really enjoyed this drizzled with plenty of fresh lemon juice – the lemon juice makes all the difference!

Only 2 more days of our challenge left! Keep up the fantastic work and keep tagging me in your salad pics on Twitter, Instagram and Facebook! #7daysaladchallenge
