Day 4 of our 7 Day Salad Challenge and we have seen salads for all diets and lifestyles so far this week, from meaty to fruity, fishy and now chickpea-y…. That didn’t really work. What I mean is that Clean Eating can suit all diet choices and requirements whether you eat a vegan diet, vegetarian, paleo, glutenfree, low carb etc, you are able to create and enjoy delicious meals that can still be clean, healthy and nutritious.

This is the kind of salad you would see me eating on a normal day. Something quick and easy to prepare and requires no cooking. I love using cartons of beans or chickpeas in salads because they are always on hand in my cupboards. When you look in the fridge and think you have run out of everything, you can probably always find something to create a well balanced meal just from your store cupboard essentials. I’m not going to lie, more often than not I do buy houmous rather than make it from scratch. I choose a good quality one without added preservatives and it just works for me right now. I do however have a recipe to make your own, it’s very simple and satisfying to make it yourself! Clean Eating Homemade Houmous

Clean Eating Houmous & Chickpea Salad
- Yield: 1 Servings
This is the kid of salad you would see me eating on a normal day. Something quick and easy to prepare and requires no cooking.
- 2 Handfuls Mixed Salad leaves, cucumber, tomatoes, celery, radishes
- 2 Tablespoons Houmous
- 1/2 carton/tin Chickpeas
- 1 good pinch Cress
- 1 teaspoon Fresh Parsley chopped
- 1 teaspoon Olive oil
- 1 teaspoon Tamari/Soya sauce
- Arrange your chosen salad veggies into a bowl and top with the houmous and chickpeas.
- Scatter over the cress and fresh parsley.
- Drizzle with olive oil and tamari sauce and serve.
