Clean Eating Rosemary Chargrilled Chicken

I’ve been having fun this week testing out my new Le Cruset griddle pan that I bought in the summer holidays whilst we were renovating the house. Around the time that our house was just a brick shell, I needed something to look forwards to so a shopping spree at Le Cruset in Bicester Village did the trick. I picked out some new pans ready for the new kitchen and it really helped me to look forwards to cooking in there, even if it was hard to imagine ever being able to!

I have never owned a griddle pan before but I have always wanted one. So far we have just used it to cook chicken and it is sooooo good and so quick! The almost smokey charred flavour got me thinking about Birds Eye Chicken Chargrills that I used to LOVE when I was a kid just without the extra 30+ ingredients.

There seems to be a fine line between this chicken being done and over done, so it has taken a bit of time to work out how quickly our hob cooks the chicken and how thin it needs to be but generally after bashing out the chicken to an even thickness, it’s taken between 5-6 minutes per side to cook.

Easy, fancy chicken in a hurry! Perfect for lunch or dinner, in a salad or sandwich or with some potatoes and veggies.

Easy, fancy chicken in a hurry! Perfect for lunch or dinner, in a salad or sandwich or with some potatoes and veggies.

Ingredients

Instructions

  1. Place the chicken breasts between two pieces of grease proof paper and bash to an even thickness with a rolling pin.
  2. Drizzle over the oil onto both sides of the chicken breasts along with the rosemary and salt.
  3. Heat the griddle pan over a high heat and once hot, turn to a medium heat.
  4. Place the chicken breasts onto the griddle pan and cook for 5-6 minutes per side.
  5. Once cooked, check that the chicken is completely cooked through and allow to rest in the pan for a couple of minutes before serving.
