Clean Eating Golden Wholegrain Banana Bread

Thank heavens for sunshiney Wednesdays and a relaxed morning in the kitchen! My sister is staying with us this week and so I baked some delicious Clean Eating Golden Wholegrain Banana Bread for when everyone is back from school and work. I can’t wait!

Yesterday I had a crazy busy day ferrying the boys to their various after school clubs and lunchtime appointments, driving around in the SNOW and teaching my late evening Zumba class. My body is so tired today but having my sister here with me for breakfast and looking forward to her coming home from work tonight has made allllllll the difference!

A cup of tea and some banana bread will be just what we all need to cosy up for the evening. I am also making some Clean Eating Turkey, Corn & Black Bean Tacos for dinner with some wholegrain rice, homemade guacamole, salsa and salad! It’s going to be sooooooo yummy!

I used Marriages Golden Wholegrain Plain Flour for this recipe, it is my favourite baking flour at the moment! I buy it from Ocado.

Clean Eating Golden Wholegrain Banana Bread

I used Marriages Golden Wholegrain Plain Flour for this recipe, it is my favourite baking flour at the moment! I buy it from Ocado.

  1. Preheat the oven to 160*C and lightly grease a loaf pan.
  2. In a large mixing bowl, whisk together the flour, baking powder, cinnamon and mixed spice. Set aside.
  3. Place the butter into a saucepan over a low heat and gently melt.
  4. Place the bananas into a shallow bowl and mash well with a fork. Stir in the maple syrup, eggs and add the butter. Mix well.
  5. Add the wet banana mixture into the flour bowl and stir together until just combined (try not to over mix).
  6. Pour the mixture into the loaf pan and place into the oven for 40 minutes.
  7. Once cooked, carefully remove from the pan and allow to cool on a wire rack.
