This is basically a scrambled version of my Bonfire Fried Eggs recipe which my husband has been making for himself since he prefers scrambled eggs to fried eggs. If you like things really spicy then add a little more chilli powder and be sure to sprinkle on those chilli flakes.
You can serve this with any toasted wholegrain bread, I like it best on clean rye bread but it would also taste great with a side of pan fried veggies and some avocado and crispy prosciutto.

You can serve this with any toasted wholegrain bread, I like it best on clean rye bread but it would also taste great with a side of pan fried veggies and some avocado and crispy prosciutto.
Ingredients
- 2 Eggs
- 1/2 teaspoon Coconut Oil
- 1/8 teaspoon Mild Chilli Powder or more to taste
- 1/8 teaspoon Ground Turmeric
- 1 pinch Fine Sea Salt
- 1 pinch Dried Chilli Flakes optional
Instructions
- Whisk up your eggs in a jug or bowl.
- Sprinkle in the chilli powder, turmeric and salt and whisk again.
- Heat the oil in a non stick pan over a medium/high heat.
- Add the egg mixture and stir until the eggs are cooked.
- Serve over some toasted wholegrain bread and top with chilli flakes.
