Clean Eating Pesto Scrambled Eggs is super delicious and can be made with any pesto you like. I used some leftover Clean Eating Coriander Lime Pesto and it was fantastic. You can serve this with a slice of wholegrain bread for a complete clean eating meal.

Ingredients
- 1/4 teaspoon Olive Oil
- 1 Egg
- 2 Egg Whites
- 1/2 Tablespoon Clean Pesto see links above
- 6 Cherry Tomatoes
- 1 handful Fresh Rocket Leaves optional
Instructions
- Whisk up the egg and egg whites in a bowl or jug.
- Heat the oil in a non stick frying pan.
- Once hot, add the egg mixture and turn the heat to low.
- Stir the eggs to 'scramble' until they are cooked.
- Once cooked, turn off the heat and stir in the pesto.
- Add the tomatoes to the pan and let them warm through a little.
- Serve over rocket leaves with a slice of wholegrain bread.
