Salads are a beautiful thing when they are done right! Adding raw, vibrant coloured vegetables into your diet can only be a good thing and when accompanied by a source of protein and a little fat it can sustain you until your next meal.
I have had this salad two days in a row and wanted to share it with you. It is a great example of a clean eaters lunchtime salad, containing everything you need to make a complete meal.
You can adapt this concept to suit your needs, tastes and whatever you have available. The lentils could be swapped for beans, chickpeas, chicken, fish or eggs and the goats cheese could have been substituted for feta, cheddar, avocado, nuts, seeds or a healthy oil.

Ingredients
- 2 cupped handfuls Salad Vegetables Leaves, Cucumber, Tomato, Celery, Carrot, Radishes, Peppers, Onions,
- 1 Cooked Beetroot diced
- 2 Tablespoons Fruit Pineapple/Grapes/Berries/Dried Fruit (optional)
- 4 Heaped Tablespoons Cooked Lentils I used around half a tin of cooked lentils
- 1-2 Tablespoons Soft Goats Cheese
Instructions
- Place your desired salad vegetables into a large bowl and add the cooked beetroot and fruit if using.
- Top with the cooked lentils and crumble over the goats cheese.
- I ate this plain, but if you wanted to add a little extra virgin olive oil and seasoning, feel free too! Enjoy!
