This is a delicious meal which could be enjoyed for lunch or dinner. A bowl of super healthy goodness, veggie and protein packed whilst being vegan, vegetarian and gluten free friendly. I absolutely love it and if it wasn’t so filling I would sit and eat bowls and bowls of it.

Clean Eating Quinoa Veggie Soup

A bowl of super healthy goodness, veggie and protein packed whilst being vegan, vegetarian and gluten free friendly.

Ingredients

Instructions

  1. Place the stock, quinoa and carrot into a saucepan and bring to the boil.
  2. Once bubbling, reduce the heat to low and cover. Simmer for 10 minutes.
  3. After 10 minutes, add all of the other vegetables, cover and cook for a further 5 minutes.
  4. Once vegetables are tender, remove from the heat season to taste and serve.
