Clean Eating Pork, Garlic & Rosemary Meatballs

We love meatballs and these were a huge success with my boys at the weekend. Garlic and rosemary are flavours we use a lot in our house, so putting them together in a meatball made everyone happy.

I used pork mince in this recipe for a change but you could also make these meatballs with some organic beef mince or a mixture of beef and pork mince.

You can serve these meatballs any way you like. I tossed ours through a very basic tomato and mixed pepper sauce and served them over some wholegrain spelt spaghetti and butternut squash noodles (as seen on Instagram) but they would be equally as delicious in plain wholegrain spaghetti tossed with olive oil, salt and pepper with roasted butternut squash and a leafy green side salad. Easy, quick and simple to put together, from my kitchen to yours I hope you love them.

Instructions

  1. Preheat a fan assisted oven to 180*C and line a baking tray with baking paper or a silicon liner.
  2. Place all of the ingredients into a large mixing bowl and mix with your hands until combined.
  3. Take out 1 Tablespoon of mixture and roll it into a ball. Place it on the baking tray and continue the process until all of the mixture has been used up.
  4. Place the meatballs into the oven and cook for 20 minutes.
  5. Once cooked through, remove from the oven and serve in your favourite sauce with wholegrain spaghetti and/or butternut squash noodles.
