I love using them in our meals instead of grains to add more variety to our diet.

You can eat these Clean Eating Roasted Coconut Sweet Potatoes with anything. We like to eat them with a curry or with some slow cooked chicken and veggies. Although they sit in the oven for 30 – 40 minutes, they are pretty low maintenance and only require three ingredients.

These Clean Eating Roasted Coconut Sweet Potatoes will go with lots of things. We like to eat them with a curry or just some slow cooked chicken and veggies. Although they sit in the oven for 30 - 40 minutes, they are pretty low maintenance and only require three ingredients.

Ingredients

Instructions

  1. Preheat the oven to 200°C.
  2. Peel and dice up the sweet potatoes into bite size pieces.
  3. Place the diced potatoes into a bowl and pour over the melted coconut oil.
  4. Stir to coat the potatoes and then pour the potatoes out onto a baking tray.
  5. Place the potatoes into the oven for 30 - 40 minutes (mine cooked in 40 minutes) turning once or twice during cooking.
  6. Once cooked, take the potatoes out of the oven and scatter over the dried coconut.
  7. Toss the coconut and potatoes together and then serve.
