I love to make up batches of pesto to have with our meals, but I also like to have enough leftover to use with my eggs or for making this crazy good guacamole. You can find my original guacamole recipe here, but if you prefer a smooth guacamole then this is the recipe for you.
Clean Eating Pesto Guacamole is dairy free, gluten free, raw and delicious! You can use it as a dip for some wholewheat bread sticks, corn chips, or veggie sticks. It also tastes great in a wrap or sandwich or would go perfectly with any Mexican dish.

Ingredients
- 3 ripe Baby Avocados
- 1 Tablespoon Clean Eating Coriander Lime Pesto see link above
Instructions
- Cut open the avocados and scoop the flesh out into a bowl.
- Add the pesto to the bowl and mash everything together until it is mostly smooth.
- Serve with some organic corn chips, wholewheat bread sticks and vegetable sticks.
