When you scroll down and look at the ingredients list you might think the food combinations are a little odd but TRUST ME, this works! I don’t remember when or why I first tried this out, but for whatever reason I am so glad that I did.

Clean Eating Mini Cheesecake Bites are so tasty! You could make up one or two of these for a quick and delicious clean eating dessert, or you could make a whole platter of them and serve them at a dinner party. They are sweet and creamy with a deliciously earthy base.

I used Nairn’s Mini Oatcakes for the base, you can get these in most supermarkets (I get mine from Ocado or Waitrose) but if you can’t get hold of them you could try making them on a regular size oatcake. For the toppings I used St Dalfour Jams – Apricot, Cherry and Raspberry. Raspberry was my favourite!

Clean Eating Mini Cheesecake Bites are so tasty! You could make one or two of these up for a delicious clean eating dessert, or you could make a whole platter of them and serve them at a party. They are sweet and creamy with a deliciously earthy base.

Instructions

  1. Carefully slice the goats cheese into 0.5 cm or smaller slices.
  2. Top each oatcake with the cheese and smooth down the edges of the goats cheese with a table knife.
  3. To make the cheesecakes look neat and tidy, you can smooth the down by gently pressing it with your finger tips.
  4. Top the cheese with up to a teaspoon of jam.
  5. Serve and enjoy.
