Clean Eating Gingerbread Energy Bites

I know it may be a little early to be thinking about Christmas but these festive little bites would make a wonderful clean eating Christmas gift for your friends and family.

All you need is a food processor and if you don’t have one maybe now is the time to start thinking about putting one on your Christmas list. I LOVE my food processor, (you can see it here) without it I couldn’t make my No Bake Bars, Energy Balls or my favourite Pesto. I think it is well worth the money and adds so much more freedom in a clean eaters life.

This recipe makes around 14 bites. They are quite sweet and so just one is enough to help curb your sugar cravings. If you like gingerbread, you will love these.

This recipe makes around 14 bites. They are quite sweet and so just one is enough to help curb your sugar cravings. If you like gingerbread, you will love these.

Ingredients

Instructions

  1. Place the cashew nut and pecans into a food processor and pulse until the nuts are mostly all broken up.
  2. Roughly chop the medjool dates and add them to the food processor along with the ground cinnamon and ginger.
  3. Turn the food processor on and allow the mixture to thoroughly combine until it sticks together when pressed between your thumb and finger.
  4. Once combined, take out 1 tablespoon of mixture and roll it into a ball, gently but firmly. Repeat this process until all of the mixture has been used up.
  5. Refrigerate the bites until chilled and enjoy.
