The Ultimate Clean Eating Sandwich

During the summer we visited a quaint little shopping village and had lunch at the gorgeous tea room there. The menu had lots to choose from including baked potatoes, pies and lasagne. Given all the choices though, my little man knew what he wanted and that was an egg and cress sandwich!

I love bread, I love sandwiches and I love that I can feel healthy and maintain my weight and still enjoy a good sandwich by eating wholesome clean bread with no nasties in it. I usually make my own bread using this recipe here, but I am fortunate enough to live not too far away from a Hambleton Bakery which sell the most delicious clean wholemeal bread as pictured above. It is amazing.

The weather is getting colder but this ultimate clean eating sandwich will give your insides and nice warm hug. It is heaven in every mouthful.

If you are a vegetarian you can leave out the prosciutto and why not try adding a spoonful of clean pesto!

The Ultimate Clean Eating Sandwich

The weather is getting colder but this ultimate clean eating sandwich will give your insides and nice warm hug. It is heaven in every mouthful.

Ingredients

Instructions

  1. Melt your oil in a non stick pan and cook your egg to your personal preference. I like a runny yolk!
  2. Whilst the egg cooks, mash the avocado onto one the the slices of bread and top with the sliced tomato.
  3. Once the egg is cooked, lay it on top of the sliced tomato and add the prosciutto to the non stick pan, cooking until crisp.
  4. Add the crisp prosciutto to the sandwich and finish with the last slice of bread.
  5. Enjoy every single bite.
