This is one of the cheapest and easiest meals that I make for my family and everyone loves it. Chicken thighs are inexpensive and easily accessible making them a great alternative to using chicken breasts if you are on a budget (or just fancy some extra tasty chicken).
This is a really simple recipe and I think that simple recipes are usually the best. These take about 45 minutes to roast in the oven but they take very little time to prepare.
These delicious chicken thighs are a great great crowed pleaser and can be served with anything. We love ours with wholegrain rice and veggies, or sweet potato mash and steamed greens.

Ingredients
- 8 Chicken Thighs approximately 1kg
- 1 teaspoon Oil of choice I used olive oil
- 1/4 teaspoon Dried Rosemary
- 1 pinch Sea Salt & Pepper
Instructions
- Preheat the oven to 180*C and trim any excess skin from the underside of the chicken thighs. (I keep the skin on top).
- Place the chicken thighs into an oven proof dish and rub in the oil over each one.
- Sprinkle over the dried rosemary and salt and pepper and place into the oven.
- Roast for 40 - 45 minutes or until completely cooked through.
- Once cooked, remove from the oven and serve with steamed green vegetables and wholegrain rice.
