When you have leftover Guacamole in the fridge, there is no better way to use it up than on some toast with a perfect poached egg!
I had this breakfast at Chiquitos a couple of years ago and it was so good, I love to recreate it at home and it makes a brilliant weekend breakfast, brunch or lunch.
This is like the upgraded version of Avocado Toast but even if you didn’t have any guacamole in the fridge, you can quickly whip some up for this, or just smash up some avocado and mix in a little lemon juice and chilli flakes instead. However your put it together, it’s always a winning combination.

Clean Eating Mexican Breakfast Toast

When you have leftover Guacamole in the fridge, there is no better way to use it up than on some toast with a perfect poached egg!
Ingredients
- 1 slice Wholegrain Toast I used a wholegrain sourdough
- 2-4 Tablespoons Guacamole see recipe link above
- 1 Egg Poached
- 1 pinch Fresh Coriander chopped
- 2 slices Fresh Red Chilli or chilli flakes to serve (optional)
Instructions
- Poach your egg and place the toast into the toaster.
- Spread your toast with a nice amount of guacamole
- Once your egg is cooked, place it on top of the guacamole toast and sprinkle with freshly chopped coriander and season with salt and pepper if desired.
- Serve and enjoy!
