I am still loving these homemade nakd bars. This is my Husbands favourite flavour so far and I really loved it too. I still can’t get over how quick and easy they are to put together. It is so handy to have a batch of these sitting in the fridge ready to grab as a quick snack or as a healthy sweet treat after dinner. Delish!

Clean Eating No Bake Cranberry Pistachio Bars are beautiful and tasty. They would make a great Clean Eating Christmas treat to share with your family and friends. They are quick to make and keep well in the fridge.
Ingredients
- 100 grams Unsalted Shelled Pistachios
- 70 grams Dried Cranberries Unsweetened
- 4 Medjool Dates stones removed
Instructions
- Place the pistachios into a food processor and blend until they resemble fine breadcrumbs
- Pour the ground pistachios into a bowl and set aside.
- Place the dates and cranberries into the food processor and blend until mostly broken up.
- Add the ground pistachios back into the food processor and give the whole thing a good mix until all the ingredients are distributed evenly throughout.
- Pour out the mixture and press firmly into a container or lunchbox with the back of a spoon. Make sure it is tightly packed. (I like mine to be around 1.5cm deep/thick)
- Cover with the lid or a piece of foil and refrigerate for at least 2 hours.
- After two hours you can turn out the hardened mixture and cut into bars.
- Wrap each bar tightly in some food wrap and keep in the fridge until needed.
