It’s not often that I would go through the hassle of making a salad dressing to go with my salad. I am more than happy with a drizzle of olive oil, lemon juice or balsamic vinegar and quite often I will just eat my salads plain. But this dressing is very simple, quick and easy and makes this salad extra special.

This is a great recipe to make with leftovers. I used leftover salad and leftover cooked chicken from my Clean Eating Slow Cooker Whole Chicken that we had for dinner the night before. Simple, quick and delicious, that’s the kind of food I like to eat.

Clean Eating Winter Chicken & Apple SaladThis is the wholegrain mustard that I used. I bought it from Ocado.

I’m loving this idea of 7 salads over 7 days…. I really must make a date with myself to do this! I’m loving the chicken and apple combo with mustardy dressing – delicious! Thanks for hooking up your salads with this month’s round of Simple and in Season.
