These Clean Eating Roasted Coconut Sweet Potatoes will go with lots of things. We like to eat them with a curry or just some slow cooked chicken and veggies. Although they sit in the oven for 30 - 40 minutes, they are pretty low maintenance and only require three ingredients.
Ingredients
- 750-800 grams Sweet Potatoes
- 1/2 Tablespoon Coconut Oil melted
- 1 - 2 Tablespoons Dried Unsweetened Coconut
Instructions
- Preheat the oven to 200°C.
- Peel and dice up the sweet potatoes into bite size pieces.
- Place the diced potatoes into a bowl and pour over the melted coconut oil.
- Stir to coat the potatoes and then pour the potatoes out onto a baking tray.
- Place the potatoes into the oven for 30 - 40 minutes (mine cooked in 40 minutes) turning once or twice during cooking.
- Once cooked, take the potatoes out of the oven and scatter over the dried coconut.
- Toss the coconut and potatoes together and then serve.
