Excuse the naff photography… I had high hopes for this recipes photos, but it just was not happening for me today! I am finding it really tricky to get good photos in our new house. Some days I can do it but most days it is a struggle!
I knew today was going to be a busy one so I got up nice and early to get a head start on my to do list. I used to wake up early to exercise but now that I am teaching Zumba 5/6 days a week I don’t feel as motivated to do that anymore. Waking up early is good for me though so I set my alarm for 6am and managed to get a wash load on and do all of the ironing before the boys got up. It definitely made a huge difference to my day and I even found time to whip up these pancakes before the school run, so that they would be ready for me to photograph once I was finished teaching my Zumba Class.
Tuesday is our busiest day and I won’t be able to do pancakes in the evening with the boys so I have got everything prepped and ready to go for the morning. My youngest doesn’t like blueberries but the rest of us love them with our pancakes so I have hid them in this sneaky 2 ingredient blueberry maple syrup. It is the perfect balance of sweet and sour and would also taste great on some natural yoghurt (or ice cream!).
Clean Eating 2 Ingredient Pancake Syrup

It is the perfect balance of sweet and sour and would also taste great on some natural yoghurt (or ice cream!).
Ingredients
- 200 grams Fresh Blueberries
- 2 Tablespoons Maple Syrup
Instructions
- Place the blueberries and maple syrup into a saucepan on high heat and start to simmer,
- Once heated, place a lid on the saucepan and turn the heat to low. Simmer covered for 5 minutes.
- After 5 minutes, remove the lid and turn off the heat. Stir the mixture and allow to cool slightly whilst it thickens up.
- Serve over pancakes, French toast or yoghurt.
