Making pesto is quickly becoming a new hobby of mine. I seriously love it! It has been fun to experiment a little with different flavour combinations and I have enjoyed every single one so far.
Clean Eating Parsley Pistachio Pesto may be a bit of a mouthful to say, but it is an extremely tasty mouthful non the less! This pesto goes great with fish, especially salmon but you can enjoy it with anything you like.

Clean Eating Parsley Pistachio Pesto may be a bit of a mouthful to say, but it is an extremely tasty mouthful non the less! This pesto goes great with fish, especially salmon but you can enjoy it with anything you like.
Ingredients
- 25 grams Unsalted Pistachios
- 10 grams Fresh Parsley
- 10 grams Fresh Basil
- 2 Tablespoons Extra Virgin Olive Oil
- 1 Tablespoons Lemon Juice
- 1 pinch Fine Sea Salt
Instructions
- Place the pistachios into a food processor and blitz until they are mostly all broken up into fine pieces.
- Add the parsley and basil and blitz again until combined.
- Add the oil, lemon juice and salt and whizz in the food processor until the pesto is thoroughly mixed. (You may need to scrape down the sides of the food processor once or twice to make sure everything is combined).
- Serve or store in the fridge for a couple of days until needed.
