I really do love eggs! Sometimes I use the whole egg and sometimes I just use the egg whites. This recipe uses just the egg whites, but feel free to use whole eggs if you prefer. 2 egg whites = 1 whole egg.

Clean Eating Spinach Scrambled Egg Whites are a delicious and filling breakfast, packed with protein, nutrients and essential vitamins. I topped mine with some sprouted seeds for a HUGE nutritious power punch.
Ingredients
- 1/4 teaspoon Olive Oil
- 4 Egg Whites
- 1 pinch Fresh Black Pepper
- 1 handful Fresh Baby Spinach Leaves
- 1 large pinch Sprouted Seeds optional
Instructions
- In a jug or bowl, whisk up the egg whites until they are light and frothy.
- Add a pinch of black pepper and whisk again.
- Heat up the olive oil in a non stick pan.
- Turn the heat to low and pour in the egg whites.
- Stir the eggs whilst they cook and scramble.
- Once cooked, turn off the heat and stir in the spinach until wilted.
- Once wilted, serve the eggs and spinach on a slice of wholegrain toasted bread. Top with sprouted seeds is desired.
