I really do love eggs! Sometimes I use the whole egg and sometimes I just use the egg whites. This recipe uses just the egg whites, but feel free to use whole eggs if you prefer. 2 egg whites = 1 whole egg.

Clean Eating Spinach Scrambled Egg Whites are a delicious and filling breakfast, packed with protein, nutrients and essential vitamins. I topped mine with some sprouted seeds for a HUGE nutritious power punch.

Instructions

  1. In a jug or bowl, whisk up the egg whites until they are light and frothy.
  2. Add a pinch of black pepper and whisk again.
  3. Heat up the olive oil in a non stick pan.
  4. Turn the heat to low and pour in the egg whites.
  5. Stir the eggs whilst they cook and scramble.
  6. Once cooked, turn off the heat and stir in the spinach until wilted.
  7. Once wilted, serve the eggs and spinach on a slice of wholegrain toasted bread. Top with sprouted seeds is desired.
