Clean Eating 7 Minute Macaroni CheeseSome days you just need some quick and satisfying comfort food and you can’t get much quicker, more satisfying or comforting than a bowl of creamy pasta.

Although I avoid most dairy, I can get away with eating goats cheese every now and then, which is fortunate as it is most definitely one of my favourite foods, and makes this amazing little meal quick and easy for me to prepare.

This quick Clean Eating 7 Minute Macaroni Cheese is perfect for a busy weeknight when you are rushed off your feet. You could add some fresh spinach leaves, basil or cherry tomatoes for a tasty vitamin boost, or serve with a side salad.

Clean Eating 7 Minute Macaroni Cheese

This quick Clean Eating 7 Minute Macaroni Cheese is perfect for a busy weeknight when you are rushed off your feet. You could add some fresh spinach leaves, basil or cherry tomatoes for a tasty vitamin boost, or serve with a side salad.

Ingredients

  • 50 grams Wholewheat Macaroni Pasta or any wholegrain pasta
  • 1 Tablespoon Soft Goats Cheese
  • 1 handful Fresh Spinach or Basil

Instructions

  1. Cook the macaroni according to packet instructions or until cooked the way you like it. 7-9 minutes.
  2. Drain the macaroni and place in your serving bowl.
  3. Add the goats cheese to the hot macaroni and stir through until melted.
  4. Add fresh spinach or basil leaves or serve with a side salad.
