My little ones love ice creams and ice lollies. In the summer months I like to keep a freezer drawer full of clean icy treats for them to eat. This not only saves me a fortune but it also means that my kiddos get to eat natural, sugar free treats all summer long without me feeling bad about it! I have been looking for the perfect ice lolly mould for ages. I knew exactly what I was looking for and after lots of searching I finally found it in Asda. It was perfect and cost just £1.50! Bargain!

The boys and I were eager to test it out so we blitzed up some fresh juicy pineapple with some thick and creamy coconut milk and they turned out great. Even my ‘White Chocolate Magnum’ loving husband enjoyed them!

Clean Eating Coconut Pineapple Ice Creams are dairy free and sugar free. They are so quick and easy to make. I made mine with a hand blender, but you could use a food processor or smoothie maker or regular blender. These are the perfect way to keep your little ones cool and happy in the summer holidays.

Helpful Tip: If your pineapple isn’t too sweet, try adding half the coconut milk, and taste to see if it is sweet enough. However it tastes before it goes into the freezer is how it will taste when it comes out, so have a play around until you are happy.

Clean Eating Coconut Pineapple Ice Creams are dairy free and sugar free. They are so quick and easy to make. I made mine with a hand blender, but you could use a food processor or smoothie maker or regular blender. These are the perfect way to keep your little ones cool and happy in the summer holidays.

Ingredients

  • 300 grams Fresh Pinapple (peeled, cored and chopped)
  • Up to 200 ml Coconut Milk If your pineapple isn't too sweet, try adding half the amount of coconut milk, or extra pineapple until it tastes good to you.

Instructions

  1. Place the pineapple into a jug and blitz with a hand blender. (Or blend in a food processor or smoothie maker).
  2. Once the pineapple is no longer lumpy, add the coconut milk and blend again. If your pineapple isn't too sweet, start with half of the coconut milk, taste and then add more if necessary.
  3. Once completely blended, taste it, and adjust to your own personal preference, adding more pineapple, or more coconut milk. Pour the mixture into ice lolly moulds and freeze overnight.
  4. Once frozen, remove the ice creams from the freezer. You may need to let them stand out for a little while, or run the outside of the mould under warm water to remove the ice creams.
  5. Serve and enjoy!
