Once a week I like to cook a whole chicken in my slow cooker and use it throughout the next few days in dinners and lunches. Usually on the day that the chicken gets cooked I add it to some yummy quinoa.
This week I was admiring the bright and colourful citrus fruits on my dinner table and decided to use them to make some zesty quinoa to go with my chicken. It was fab. Fresh and filling, this Clean Eating Chicken Citrus Quinoa is the perfect summertime protein packed meal.
I used chicken straight from my slow cooker for this recipe, but you can just roast a couple of chicken breasts in your oven to add to it if you like.
Clean Eating Chicken Citrus Quinoa

Ingredients
- 2 large Chicken Breasts
- 180 grams Quinoa rinsed
- 500 ml Stock
- 1 Clementine
- 1 Lime
- 1/2 Lemon
- 1 handful Fresh Coriander
Instructions
- Preheat the oven to 200°C and place the chicken into the oven to cook for 25-30 minutes.
- Rinse the quinoa in a fine sieve and place in a saucepan with the stock and bring to the boil.
- Once bubbling turn the heat down and cover with the lid. Simmer for 12-15 minutes until the liquid has been absorbed.
- Once the quinoa is cooked squeeze in the juice of the clementine, lime and half the lemon and stir.
- Roughly chop a large handful of fresh coriander and stir through the quinoa.
- Once the chicken is cooked through dice it up and add it to the quinoa and serve with a large side salad.
