This is what my autumn is going to look like. A beautiful bowl of golden, crisp, sweet oats crammed with deliciously toasted pecans. Yummy!
I cannot tell you how simple and easy this is to make. In less than half an hour you will have made a weeks worth of breakfast cereal, plus your house will smell amazing and the best part…. It doesnt use a lot of dishes so there wont be a lot of washing up to do either. (I honestly feel a little bit guilty that the beautiful jar of maple pecan crunch sitting on my kitchen side didn’t require an awful lot more work!).
This is up there with my most favourite blog recipes and it has had the husbands (second helpings) seal of approval too. Seriously, this one is a winner!

Clean Eating Maple Pecan Crunch

Serve this cereal with milk and berries, or sprinkle it over fresh fruit and natural yoghurt. Go on, go make yourself some breakfast!
Ingredients
- 200 grams Jumbo Oats
- 80 grams Rolled Oats regular porridge oats
- 140 grams Pecans broken into 2 or 3 pieces
- 1 teaspoons Ground Cinnamon
- 2 Tablespoons Coconut Oil melted
- 4 Tablespoons Pure Maple Syrup
Instructions
- Preheat the oven to 200*C and have a baking tray ready to go.
- In a large bowl combine the oats, pecans and ground cinnamon and stir to combine.
- Melt the coconut oil in a saucepan and then pour it into the oats along with the maple syrup.
- Stir the mixture thoroughly until everything is well combined.
- Pour the mixture out onto the baking tray and spread out evenly with a spoon.
- Place the baking tray into the oven and set the timer for 10 minutes.
- After 10 minutes, take out the baking tray and give the oat mixture a good stir, before shaking gently to level out again before going back into the oven for a further 8 - 10 minutes until browned and crisp.
- Once crisp, remove the baking tray from the oven and allow the mixture to cool completely before storing in an air tight container.
- You can serve this delicious cereal with milk and berries or fresh fruit salad and natural yoghurt.

24th October 2014 at 5:53 pmI am def making this tomorrow although I only have normal oats no jumbo ones but am sure it will be just as good. I will prob eat it as a snack when I need something more than plain nuts or fruit. Can’t wait : ).

26th October 2014 at 11:53 amIf you want maple syrup but sugar free Josephs do a fantastic thick one. Most sugar free syrups are very runny. You can find it at low carb megastore ☺
