There are lots of little snacks that I whip together throughout the day that I enjoy but never think to share. But this one was so perfect and so delicious that I had to tell you about it. I know its not really a recipe, more of an idea but this combination of texture and flavour is epic!
This would make a great snack after a workout, giving you a kick of lean protein and healthy fat. It would even be a great little snack to make up if you found yourself craving something savoury and were headed for a bag of crisps. This can satisfy your cravings. It is SO good!
I used just 1 whole egg, but you could use whatever combination of eggs or egg whites as you like.
Helpful Tip: You can buy this cottage cheese from Waitrose or Ocado.
Clean Eating Basil Scrambled Eggs & Cottage Cheese

Ingredients
- 1/4 teaspoon Oil of choice I used olive oil
- 1 Egg
- 5 Fresh Basil Leaves
- 1 heaped tablespoon Cottage Cheese full fat organic if possible
Instructions
- Place the oil into a non stick frying pan and turn the heat to medium/high.
- Whisk up the egg and tear up the basil leaves before mixing in.
- Pour the egg and basil mixture into the saucepan and cook the eggs whilst stirring until there is no more liquid egg.
- Place the eggs into a small bowl and serve with cottage cheese. Enjoy!
