In my bid to be more organised and reach some goals this year I have tried to make more of an effort to plan and prepare my meals and snacks in advance. This worked amazing well when I planned and prepared healthy snacks to eat throughout the week and so I am now trying to plan my working lunches too.
I work from home so don’t actually always have to prepare food for lunchtimes but my schedule isn’t always completely reliable and I have to work around a few commitments like teaching Zumba and the kids evening clubs. On a Tuesday we have a packed lunch for dinner whilst my youngest is at Gymnastics training, so planning something healthy and enjoyable is a lot nicer than eating a last minute sandwich and packet of popcorn.
Here are some of my favourite lunches that can be prepared in advance and taken to work or on the go to ensure you eat something that not only satisfies you but also helps you to feel healthy and energised.
