I’d usually pick something a little more exotic like fresh lychee’s, dragon fruit and vegetables like shallots, kale and yellow or orange peppers, all of which I had never cooked with before. (We only did green and red peppers in my house growing up, oh how I had been missing out!).

I can remember one day making the most delicious sweet yellow pepper pasta sauce with the fresh vegetables that I had picked from that week. It felt so good to know that I was able to get all of that goodness into my little man and definitely made for a happy lunchtime together.

I recreated that recipe to go with some meatballs last week and it didn’t disappoint. Sweet and delicious, this sauce can stand alone or be enjoyed with hearty meatballs or vegetables. You can also make this up in batches and store in your freezer for quick and easy meals any night of the week.

Clean Eating Yellow Pepper Pasta Sauce

Sweet and delicious, this sauce can stand alone or be enjoyed with hearty meatballs or vegetables. You can also make this up in batches and store in your freezer for quick and easy meals any night of the week.

Ingredients

Instructions

  1. Place the oil, onion, celery and yellow pepper into a non stick saucepan and soften for 3-5 minutes.
  2. Add the garlic and stir.
  3. Pour in the chopped tomatoes and a splash of water and bring to the boil.
  4. Once bubbling reduce the heat and allow to simmer for about 10 minutes or until the vegetables have softened enough to blend.
  5. Take the pan off the heat and allow to cool slightly before blitzing with a hand blender until smooth.
  6. Serve, or allow to cool completely before storing in the fridge or freezer.
