At 9am this morning I was positive that I had just wasted 6 perfectly good organic baking potatoes by wrapping them in foil and placing them into my slow cooker. However, (by some miracle) 8 hours later I unwrapped the silver parcels to find perfectly cooked jacket potatoes. Genius!!

I had heard that you could cook potatoes in the slow cooker, I just didn’t believe that it would actually work for ME. You know that feeling? I think it comes from having too many epic fails in the kitchen when following recipes. I am not a great recipe follower.

I don’t eat white potatoes a lot, not because I think they are bad, I just prefer sweet potatoes. I have heard that some clean eaters don’t eat them at all but as far as I am concerned, they are real food, they grow in the ground and if you like white potatoes, eat them and enjoy them!

Helpful Note: These potatoes are so filling, strangely more so than oven baked potatoes. I would probably eat half of one topped with chilli or beans and serve it with a side salad for a complete meal.

Clean Eating Slow Cooker Jacket Potatoes

These potatoes are so filling, strangely more so than oven baked potatoes. I would probably eat half of one topped with chilli or beans and serve it with a side salad for a complete meal.

Ingredients

Instructions

  1. Drizzle the oil and salt over the potatoes and give them a rub.
  2. Wrap each potato up individually in foil.
  3. Place the potatoes into you slow cooker, it's fine if you have to put them on top of each other.
  4. Place the lid onto the slow cooker and cook on LOW for 8 hours.
  5. After 8 hours, carefully remove the potatoes (they will be HOT!) and serve with some organic/grass fed butter.
