The Kitchen Shed - Clean Eating Mexican Oven Baked FajitasI’m on a Mexican roll this week with my Clean Eating Mexican Turkey Tacos and now these beautiful Fajitas! We all loved these! My 5 year old said “That was fantastic, can we have that again?” Followed by, “We’re definitely blogging that!” Bless him!

These really did taste great, but what I loved more than anything was putting all of the ingredients into the oven and then leaving it! Ahh, one pot meals make my life! Fuss free, healthy, delicious food ready in half an hour. Perfect! You could even prepare this in advance and leave it in the fridge until you are ready to cook it. The flavour would probably be even better!

Clean Eating Oven Baked Mexican Fajitas are quick and easy and taste so good! You can serve them in a clean tortilla wrap or on a baked sweet potato with salad. You can top them with some clean salsa and some organic cheese.

Helpful Tip: I used these clean flatbreads in the pictures above which can be purchased from Ocado, Morrissons and Amazon.

Clean Eating Oven Baked Mexican Fajitas are quick and easy and taste so good! You can serve them in a clean tortilla wrap or on a baked sweet potato with salad. You can top them with some clean salsa and some organic cheese.

Ingredients

Instructions

  1. Preheat the oven to 180°C.
  2. Place the sliced peppers, mushrooms and chicken into a large baking tray or oven proof dish.
  3. Sprinkle over all the herbs and spices and drizzle over the olive oil.
  4. Toss the whole thing together with a spoon until the chicken is completely coated in the spices.
  5. Cover with foil and place into the oven for 15 minutes.
  6. After 15 minutes turn the heat up to 220°C and remove the tray from the oven.
  7. Remove the foil from the tray and give everything a good mix.
  8. Place the tray back into the oven, uncovered for another 10 minutes.
  9. After 10 minutes check that the chicken is completely cooked through and serve.
