Clean Eating Jam Tarts - The Kitchen ShedI bet you didn’t think you would be able to eat Jam Tarts whilst eating clean did you? Well, now you can!

These would be considered a special Clean Eating treat. I probably wouldn’t ever make up a batch of clean pastry  just so that I could make them, BUT here at The Kitchen Shed I like to make sure that I keep waste to a minimum and so when I am making a clean eating quiche or pie  I like to collect all of the little scraps of leftover pastry, roll them out and cut them into as many circles as I can to fill with clean jam before baking in the oven.

My boys LOVE these, they think they are such a special treat but Mums and Dads beware of sticky fingers, and sticky faces, and sticky sofas, cushions, clothes, cupboards, pens and notepads…

For a grown up twist top each of the Clean Eating Jam Tarts with a few fresh mint leaves, the raspberry jam and the mint taste AMAZING together, extra nutritious and delicious!

    For a grown up twist top each of the Clean Eating Jam Tarts with a few fresh mint leaves, the raspberry jam and the mint taste AMAZING together, extra nutritious and delicious!

    Ingredients

    Instructions

    1. Preheat the oven to 180°C.
    2. Collect together all of your leftover pastry and form into a ball.
    3. Roll out the pastry until it is about 0.5cm thick.
    4. Using a pastry cutter or cup, cut out as many circles as you can.
    5. Place the pastry circles into a lightly greased cupcake baking tray. (You can use coconut oil or organic butter to grease the tray).
    6. Place 1/2 Tablespoon of jam into the center of each pastry circle.
    7. Place the baking tray into the oven and cook for 20 minutes until the jam is bubbling and the pastry is golden brown.
    8. Once cooked, remove from the oven and allow to cool before topping with mint leaves and serving.
