Updated 7/1/15: It has become increasingly difficult to find clean pitta breads in the supermarkets which is such a shame because if it wasn’t for one little added preservative then these would be SO handy for clean eaters. These days I purchase my pitta bread from a local wholesaler or PlanetOrganic.com.

I’ve just finished a 21 Day Vegan Cleanse. It was a challenge that was presented to me and I took it, thinking it would be a fun experience and relatively easy. Oh how I was wrong! The first 4 days were fine, but after that I was ready to quit.

Thanks to my supportive Husband and Brother in law, I carried on the challenge with the goal of just finishing something I had committed to doing, and I am really glad I did.

I lost 7 lbs and found a new appreciation for the food that I eat, as well as creating some delicious vegan recipes that I can use in my everyday life. It also enabled me to think carefully about the food choices I make and way. Although I don’t plan on being a fully fledged vegan, I have a new admiration for, and understanding of vegans and will always include vegan recipes in my diet.

The day before my vegan cleanse finished I popped to Waitrose to pick up a few supplies and whilst I was there I realised that I could choose whatever food I wanted to eat the for the following day. To my surprise, what ended up in my basket was goats cheese, honey & spelt bread, set honey and eggs. – So I guess I could be a vegetarian!

This scrummy quick lunchtime treat was just what my 21 day vegan body needed.

Clean Eating Goats Cheese Pitta Pizza

A quick, easy and extremely satisfying lunchtime treat.

Ingredients

Instructions

  1. Preheat the oven to 180°C.
  2. Place the pitta breads onto a baking tray and spread each one with 1tsp of tomato purée.
  3. Sprinkle on the oregano.
  4. Using a fine grater/zester grate 3/4 of the goats cheese over pitta breads and set the rest aside.
  5. Top each pitta with the vegetables and olives.
  6. Grate over the rest of the cheese and place the baking tray in the oven for 8 minutes.
  7. Once removed from the oven, allow to cool for a minute or two before slicing and serving.
