Perhaps I have been missing out, but as a bit of an advocate for carbs, I think I would probably choose wholegrain rice over cauliflower rice most days. This was actually really yummy though, and not terribly fussy to make. It was actually a lot quicker than cooking up brown rice which is always a bonus.
Perfect for those trying to loose weight or those following a low carb diet. Taste and texture wise, cauliflower rice is a pretty clever substitute with lower calories.

Clean Eating Egg Fried Cauliflower Rice

Perfect for those trying to loose weight or those following a low carb diet. Taste and texture wise, cauliflower rice is a pretty clever substitute with lower calories.
Ingredients
- 250 grams Cauloflower
- 2 Spring Onions
- 1 handful Kale
- 1/2 teaspoon Chinese 5 Spice
- 1 dash Tamari Sauce
- 1/2 teaspoon Oil of choice I used coconut Oil
- 2 Eggs
Instructions
- Place the cauliflower floerts into a food processor and blitz until 'riced'.
- Heat up the oil in a wok and add the eggs. Stir until scrambled.
- Once the eggs are cooked, add the cauliflower rice, spring onions, kale, chinese 5 spice and tamari sauce.
- Cook for 2-3 minutes until heated through.
- Serve with extra tamari sauce if desired.
