This combination of vegetables and seasoning is my absolute favourite. In the middle of winter it can transform me to the summer, just by smelling it.
We eat a lot of different meals with roasted vegetables, our favourites are with quinoa, topped with salty feta cheese, or with roasted meatballs and wholegrain spaghetti, drizzled with a little olive oil, salt and chilli flakes…. so good!

Ingredients
- 1 Courgette diced
- 1 Yellow Pepper diced (seeds removed)
- 1 Red Onion diced
- 350 grams Cherry Tomatoes
- 200 grams Button Mushrooms wiped clean
- 100 grams Green Olives
- 50 grams Kalamata Olives
- 1 Tbsp Oil of choice I used olive oil
- 1 tsp Dried Basil
- 1 tsp Dried Oregano
- 1/2 tsp Garlic Powder alternatively mince in fresh garlic at the end of cooking
- 1 pinch Fine Sea Salt
- 1 bunch Fresh Parsley to serve (optional)
Instructions
- Place all of the vegetables into a large mixing bowl.
- Drizzle over the oil, herbs and seasoning and salt.
- Toss to coat the vegetables and pour into the ActiFry.
- Set the timer for 25 minutes and turn on.
- Once finished, stir into wholegrain spaghetti or cooked quinoa and top with freshly chopped parsley.
