Clean Eating Easy Roasted Vegetables

I LOVE this recipe! ‘Roasting’ vegetables in the ActiFry makes it soooooooo easy but if you do not have an ActiFry yet, then head on over to this post for the oven recipe version! Clean Eating Summer Roasted Veggie Quinoa

This combination of vegetables and seasoning is my absolute favourite. In the middle of winter it can transform me to the summer, just by smelling it.

We eat a lot of different meals with roasted vegetables, our favourites are with quinoa, topped with salty feta cheese, or with roasted meatballs and wholegrain spaghetti, drizzled with a little olive oil, salt and chilli flakes…. so good!

However your serve these Easy Roasted Vegetables, they are sure to add a gorgeous slash of colour to your plate and make your meal even more delicious!

Add freshly cooked wholegrain spaghetti to the ActiFry after cooking and stir together for extra delicious flavour!

  1. Place all of the vegetables into a large mixing bowl.
  2. Drizzle over the oil, herbs and seasoning and salt.
  3. Toss to coat the vegetables and pour into the ActiFry.
  4. Set the timer for 25 minutes and turn on.
  5. Once finished, stir into wholegrain spaghetti or cooked quinoa and top with freshly chopped parsley.
