I am sure that one of the reasons we put butter all over our vegetables is to hide the fact that they are over cooked. One tip I have found when it comes to Clean Eating and vegetables is that steaming is the way to go! Not only do the vegetables keep hold of a lot more nutrients, it is also a lot easier to keep an eye on the timings and take the vegetables off the heat when they are just done.
You want vegetables to retain their bright colours and hold their shape. If you don’t have a steamer, it might be worth looking into getting one. They are definitely worth the money and you can pick one up for under £10.

Clean Eating Cabbage and Leeks is the perfect vegetable side to go along with any meal and when cooked until just done, you will never need to butter your veggies again!
- Place your washed and sliced vegetables into a steamer and steam for 5 - 10 minutes.
- Mine took 8 minutes, but check after 5 minutes and then every two minutes until the cabbage is tender.
- Stir together and serve.
