I’ve been a bit meatball mad this month.
Meatballs are like a luxury food to me. It is rare that I would let a whole pack of mince be used for just one meal, I spend my life looking for ways to make my meals stretch further by adding beans, lentils or extra vegetables, so it isn’t often that I make meatballs for dinner.

I do LOVE meatballs though and they are a quick and delicious meal to prepare. This recipe is very simple but really tasty. If your kiddos wont eat kale, try them with these meatballs, they will never know they are eating it.
You can serve these meatballs with your favourite homemade sauce and spaghetti or by themselves with a baked sweet potato and salad.

Clean Eating Beef & Kale Meatballs

You can serve these meatballs with your favourite homemade sauce and spaghetti or by themselves with a baked sweet potato and salad.
Ingredients
- 400-500 grams Organic Minced Beef
- 1 hanful Kale finely sliced
- 4 Spring Onions finely sliced
- 1 Tablespoon Fresh Herbs I used parsley & basil
Instructions
- Preheat the oven to 180*C and line or lightly grease a baking tray.
- In a large mixing bowl, combine all of the ingredients and mix together well with your hands.
- Once well combined, take out 1 Tablespoon of mixture at a time and roll into balls. Place the balls on the baking tray.
- Once all of the meatballs are rolled, place them into the oven for 20 minutes, until cooked through.
- Serve with your favourite sauce or enjoy by themselves.
