Clean Eating Baked Rosemary Cod – (Aldi)

I have been having fun creating recipes to add to my Clean Eating Aldi Series. It’s given me something specific to focus on creating and I really enjoy the challenge.

Blogging is a funny hobby/job to have. There are no rules, you are your own boss and there is no right or wrong way to do it. I find that quite hard sometimes especially as I have to be the one to self motivate myself to make the rules and decide what I want to create. This Aldi series has been great for increasing my motivation and creativity so Im looking forwards to seeing where it takes me.

If you know me, you know I like a bit of convenience when it comes to cooking. Doesn’t everyone? And if that convenience happens to be something I consider healthy then win win! Keeping my freezer stocked with ‘cook from frozen’ fish is an absolute life saver on evenings when I have nothing fresh to cook. Sometimes that is because I haven’t been shopping, sometimes it’s because what I had planned from the freezer didn’t defrost in time, or the meal I had planned was no longer an option.

This is a really lovely light meal and it is so versatile! I love cooked tomatoes and my boys LOVE olives but courgettes and peppers would also be nice. You could add some minced garlic to the dish or just simply cook it with the rosemary, salt and sliced lemon wedges.

This is the kind of meal I like to serve with some crushed Rosemary Roasted Potatoes and a salad or Mediterranean Roasted Vegetables. You could also try serving it with some Wholegrain Spaghetti or Quinoa, stirring through the pan juices to add extra flavour.

Aldi’s Kalamata Olives contain:

Kalamata Olives, Water, Salt, Red Wine Vinegar, Acidity Regulator: Lactic Acid.

I personally am not too concerned with acidity regulators, but if Aldi sold Kalamata Olives without an acidity regulator I would choose them instead. Waitrose and Ocado sell a brand of jarred olives called Gaea and they do not contain any acidity regulators.

Shopping List:

  • 1 bag Frozen Cod Fillets
  • 1 Block Unsalted Butter
  • 1 Pack Fresh Rosemary
  • Sea Salt
  • Black Pepper
  • 1 Jar Kalamata Greek Olives
  • 225grams Sunstream Vine Tomatoes
  • 1 Bunch Fresh Parsley

Clean Eating Baked Rosemary Cod - Aldi

Instructions

  1. Preheat a fan assisted oven to 180*C.
  2. Place the cod fillets into a lidded baking dish (or any high rimmed oven dish you can cover with foil).
  3. Pinch off little knobs of butter and place them over each cod fillet. Sprinkle over the fresh rosemary, salt and pepper.
  4. Place the olives around the cod along with the vine tomatoes and place into the oven with the lid on (or covered with foil) and bake for 20-25 minutes or until completely cooked through.
  5. Once cooked, top with some fresh parsley and serve.
