Clean Eating Blueberry Maple Syrup

Excuse the naff photography… I had high hopes for this recipes photos, but it just was not happening for me today! I am finding it really tricky to get good photos in our new house. Some days I can do it but most days it is a struggle!

I knew today was going to be a busy one so I got up nice and early to get a head start on my to do list. I used to wake up early to exercise but now that I am teaching Zumba 5/6 days a week I don’t feel as motivated to do that anymore. Waking up early is good for me though so I set my alarm for 6am and managed to get a wash load on and do all of the ironing before the boys got up. It definitely made a huge difference to my day and I even found time to whip up these pancakes before the school run, so that they would be ready for me to photograph once I was finished teaching my Zumba Class.

Tuesday is our busiest day and I won’t be able to do pancakes in the evening with the boys so I have got everything prepped and ready to go for the morning. My youngest doesn’t like blueberries but the rest of us love them with our pancakes so I have hid them in this sneaky 2 ingredient blueberry maple syrup. It is the perfect balance of sweet and sour and would also taste great on some natural yoghurt (or ice cream!).

It is the perfect balance of sweet and sour and would also taste great on some natural yoghurt (or ice cream!).

Ingredients

Instructions

  1. Place the blueberries and maple syrup into a saucepan on high heat and start to simmer,
  2. Once heated, place a lid on the saucepan and turn the heat to low. Simmer covered for 5 minutes.
  3. After 5 minutes, remove the lid and turn off the heat. Stir the mixture and allow to cool slightly whilst it thickens up.
  4. Serve over pancakes, French toast or yoghurt.
