It’s Seafood Week! A week where seafood lovers get the chance to celebrate all of the many wonders that the sea offers.
I love seafood and I have become a lot more confident in cooking it over the past few years and even more so since our family adopted ‘Fish Fridays’ once a week.
If you love fish, but are a bit unsure on how to cook it then this recipe is a great one to try. I love ‘cook from frozen’ fish fillets. They are so handy to keep in the freezer ready to make for dinner any time you need them. I often buy Aldi’s frozen rainbow trout fillets and they are some of the best frozen fish fillets I have ever had.
With a little simple flavouring and careful wrapping before cooking in the oven (this video shows how I like to wrap mine in baking paper), you can be just 20 minutes away from a gorgeous light, flavourful dinner that the whole family will enjoy.

Clean Eating Lemon & Garlic Butter Rainbow Trout

This simple fish recipes is light and flavour packed making it a great meal for the whole family.
Ingredients
- 1 teaspoon Oil of choice I used olive oil
- 4 Frozen Rainbow Trout Fillets I bought mine from Aldi
- 1 Tablespoon Softened Butter Organic Unsalted if possible
- 1 Tablespoon Fresh Parsley finely chopped
- 1 Garlic Clove minced/finely grated
- 1 pinch Fine Sea Salt & Black Pepper
- 1 Lemon sliced
Instructions
- Preheat the oven to 180*C. In a small bowl, thoroughly mix together the butter, parsley and garlic with a fork.
- Tear off 4 long pieces of greaseproof baking paper or foil and rub 1/4 teaspoon of oil into the middle of each piece.
- Place the frozen rainbow trout fillets skin side down onto the oiled sheet and rub over the garlic butter. (I fined this easiest to do with my fingers).
- Wrap the sheets of paper or foil into little parcel with a pocket of air above the rainbow trout fillets. Place the parcels onto a baking tray.
- Place the baking tray into the oven and cook for 20-25 minutes (or according to packet instructions).
- Once cooked, remove from the oven and carefully take out of the parcels.
- Serve with extra parsley and lemon if desired.
