For this recipe I used my ‘Pesto – For Stuffing’. It is basically pesto without the oil which means that when you stuff it inside something, it doesn’t end up leaking out in the oven. Genius!

These meatballs are so versatile. You could definitely serve them the traditional way with some wholegrain or vegetable spaghetti and sauce, or maybe with a side of quinoa. You could even make them up to use as a snack or to go with your meals. I could quite happily just sit and nom down on a bowl of them just as they are.

These meatballs are so versatile. You could definitely serve them the traditional way with some wholegrain or vegetable spaghetti and sauce, or maybe with a side of quinoa. You could even make them up to use as a snack or to go with your meals. I could quite happily just sit and nom down on a bowl of them just as they are.

Ingredients

  • 500 grams Turkey Mince I used turkey thigh mince
  • 4 Tablespoons Pesto - For Stuffing see link above
  • 50 grams Feta Cheese full fat organic if possible

Instructions

  1. Preheat the oven to 180*C and line a baking tray with grease proof paper.
  2. Place all the ingredients into a large mixing bowl and thoroughly combine with your hands.
  3. Take put 1 Tablespoon of mixture and roll it into a ball before placing it on the baking tray.
  4. Continue this process until you have used up all of the mixture. You should have approximately 28 meatballs.
  5. Place the meatballs into the oven and bake for 20 minutes or until golden brown and cooked through.
  6. Serve and enjoy!
