Creating a recipe for clean mince pies has been high on my priority list this week but before I could even think about how I was going to make the filling, I needed to come up with a recipe for the pastry base. I knew that this olive oil pastry just wouldn’t be right so here is a very basic but clean, whole and natural alternative to sweet pastry.
This recipe is enough to be the top or bottom of one 9 inch pie or would be enough to be the top or bottom of 12 smaller ones.

Ingredients
- 150 grams Plain Wholemeal Flour
- 2 Tablespoon Coconut Oil solid
- 4 Tablespoon Cold Water
- 1 Tablespoon Pure Maple Syrup
Instructions
- Place the flour and coconut oil into a food processor and blitz until the coconut oil is incorporated into the flour.
- Pour in the water and maple syrup and blitz until everything starts to come together.
- Remove the dough from the food processor and roll into a ball.
- Place on a floured surface and roll out as needed.
