Clean Eating Super Salad with Goats Cheese and Lentils

Clean Eating Super Salad with Goats Cheese and LentilsClean Eating Super Salad with Goats Cheese and LentilsClean Eating Super Salad with Goats Cheese and LentilsSalads are a beautiful thing when they are done right! Adding raw, vibrant coloured vegetables into your diet can only be a good thing and when accompanied by a source of protein and a little fat it can sustain you until your next meal.

I have had this salad two days in a row and wanted to share it with you. It is a great example of a clean eaters lunchtime salad, containing everything you need to make a complete meal.

You can adapt this concept to suit your needs, tastes and whatever you have available. The lentils could be swapped for beans, chickpeas, chicken, fish or eggs and the goats cheese could have been substituted for feta, cheddar, avocado, nuts, seeds or a healthy oil.
