A salad often gets a bad rep, but it doesn’t take a lot of effort to turn lettuce and tomatoes into something extra special. I have used a few brilliant seasonal ingredients to make this salad sparkle. Pomegranate seeds are the stars of this show, both in the appearance and taste. Each little pink gem is like an explosion of tangy juicyness in your mouth. So perfect with the soft and creamy goats cheese.

This is a low carb salad, but feel free to eat it with a slice of clean wholemeal bread or rye bread. Alternatively, you could add some cooked chicken or lentils to up the protein and fill you up.

    This is a low carb salad, but feel free to eat it with a slice of clean wholemeal bread or rye bread. Alternatively, you could add some cooked chicken or lentils to up the protein and fill you up.

    Ingredients

    Instructions

    1. Pile the salad leaves and other vegetables onto a large serving plate or bowl.
    2. Add the seeds of half a pomegranate by whacking the skin side of the pomegranate with the back of a spoon and catching the seeds underneath with you hand.
    3. Crumble over the goats cheese and serve.
