Clean Eating Pesto Scrambled Eggs is super delicious and can be made with any pesto you like. I used some leftover Clean Eating Coriander Lime Pesto and it was fantastic. You can serve this with a slice of wholegrain bread for a complete clean eating meal.

Instructions

  1. Whisk up the egg and egg whites in a bowl or jug.
  2. Heat the oil in a non stick frying pan.
  3. Once hot, add the egg mixture and turn the heat to low.
  4. Stir the eggs to 'scramble' until they are cooked.
  5. Once cooked, turn off the heat and stir in the pesto.
  6. Add the tomatoes to the pan and let them warm through a little.
  7. Serve over rocket leaves with a slice of wholegrain bread.
