I still can’t get over how quick and easy they are to put together. It is so handy to have a batch of these sitting in the fridge ready to grab as a quick snack or as a healthy sweet treat after dinner. Delish!

Clean Eating No Bake Cranberry Pistachio Bars are beautiful and tasty. They would make a great Clean Eating Christmas treat to share with your family and friends. They are quick to make and keep well in the fridge.

Ingredients

Instructions

  1. Place the pistachios into a food processor and blend until they resemble fine breadcrumbs
  2. Pour the ground pistachios into a bowl and set aside.
  3. Place the dates and cranberries into the food processor and blend until mostly broken up.
  4. Add the ground pistachios back into the food processor and give the whole thing a good mix until all the ingredients are distributed evenly throughout.
  5. Pour out the mixture and press firmly into a container or lunchbox with the back of a spoon. Make sure it is tightly packed. (I like mine to be around 1.5cm deep/thick)
  6. Cover with the lid or a piece of foil and refrigerate for at least 2 hours.
  7. After two hours you can turn out the hardened mixture and cut into bars.
  8. Wrap each bar tightly in some food wrap and keep in the fridge until needed.
