Clean Eating Basil Scrambled Eggs & Cottage Cheese

imageClean Eating Cottage CheeseClean Eating Basil Scrambled Eggs & Cottage CheeseThere are lots of little snacks that I whip together throughout the day that I enjoy but never think to share. But this one was so perfect and so delicious that I had to tell you about it. I know its not really a recipe, more of an idea but this combination of texture and flavour is epic!

This would make a great snack after a workout, giving you a kick of lean protein and healthy fat. It would even be a great little snack to make up if you found yourself craving something savoury and were headed for a bag of crisps. This can satisfy your cravings. It is SO good!

I used just 1 whole egg, but you could use whatever combination of eggs or egg whites as you like.

Helpful Tip: You can buy this cottage cheese from Waitrose or Ocado.

Clean Eating Basil Scrambled Eggs & Cottage Cheese

  • Yield: 1 Servings

I used just 1 whole egg, but you could use whatever combination of eggs or egg whites as you like.

Ingredients

  • 1/4 teaspoon Oil of choice I used olive oil
  • 1 Egg
  • 5 Fresh Basil Leaves
  • 1 heaped tablespoon Cottage Cheese full fat organic if possible

Instructions

  1. Place the oil into a non stick frying pan and turn the heat to medium/high.
  2. Whisk up the egg and tear up the basil leaves before mixing in.
  3. Pour the egg and basil mixture into the saucepan and cook the eggs whilst stirring until there is no more liquid egg.
  4. Place the eggs into a small bowl and serve with cottage cheese. Enjoy!
